"If there's a time to sow and a time to reap, for Christopher and Alison Marks it was three years ago when they retreated from Montreal to open their own farm. "We'd been in the city forever and we thought it was time to find a place to start gearing down," says Alison. That place was just outside Knowlton, Que., a picturesque village in the Eastern Townships. What they sow is lavender, but what they reap is beyond their expectations. Opened in 2007, Joie de Lavande is a lavender "experience," where visitors can take cuttings from the plants and peruse a boutique filled with lavender goods. "But it's not just about cutting flowers and heading home." says Alison. "We want people to stay the day. explore the property, picnic on the deck or lounge by the pond. Lavender is known to induce relaxation, and we want this place to embody that."
